- 500 g of salmon
- 1/4 teaspoon ground garlic
- Pepper to taste
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 cup chicken or white wine broth
- 1 teaspoon of lemon juice
- 1 pinch of Italian seasoning
- 3 tablespoons Dijon mustard
- 1 cup of cream
- Fresh parsley to taste
Cut the salmon into 4 parts. Sprinkle ground garlic and pepper on top. Next, batter each part in flour.
Add the butter and oil to a pan over medium heat. When it's hot, toss the salmon. Cook for 3-4 minutes on each side until golden brown (make sure the fish doesn't get too much). Reservation.
Add chicken stock or wine, lemon juice, Italian seasoning, and Dijon mustard in the pan. Let the mixture simmer for 1-2 minutes.
Pour the cream into the pan and let it be done for two minutes to take body.
Add the salmon to the mixture from the pan and lower the heat. Cook it for a few minutes, until it crumbles easily with a fork.
Season with salt and pepper. Serve immediately.
